Rhubarb Bread

Ingredients

  • 3 eggs
  • 1 c. salad oil
  • 2 c. brown sugar
  • 2 tsp. vanilla
  • 2 1/2 c. finely diced rhubarb
  • 1/2 c. chopped walnuts
  • 3 c. flour
  • 2 tsp. each: soda and cinnamon
  • 1 tsp. salt
  • 1/2 tsp. each: baking powder, nutmeg and allspice

Directions

    In large bowl, mix eggs, salad oil, brown sugar and vanilla. Beat until thick and foamy.

    Stir in rhubarb and walnuts.

    In separate bowl, combine flour (or use 1 1/2 cups each white and whole wheat flour), soda, cinnamon, salt, baking powder, nutmeg and allspice.

    Mix dry ingredients into rhubarb mixture with spoon.

    Spoon into 2 greased and floured loaf pans and bake at 350° for 1 hour.
