Rhubarb Bread

- 3 eggs
- 1 c. salad oil
- 2 c. brown sugar
- 2 tsp. vanilla
- 2 1/2 c. finely diced rhubarb
- 1/2 c. chopped walnuts
- 3 c. flour
- 2 tsp. each: soda and cinnamon
- 1 tsp. salt
- 1/2 tsp. each: baking powder, nutmeg and allspice
Directions

1In large bowl, mix eggs, salad oil, brown sugar and vanilla. Beat until thick and foamy.

2Stir in rhubarb and walnuts.

3In separate bowl, combine flour (or use 1 1/2 cups each white and whole wheat flour), soda, cinnamon, salt, baking powder, nutmeg and allspice.

4Mix dry ingredients into rhubarb mixture with spoon.

5Spoon into 2 greased and floured loaf pans and bake at 350° for 1 hour.
