- 1/3 c. margarine
- 1 1/4 c. brown sugar, packed
- 1 Tbsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. chopped rhubarb
- 2 eggs
- 1/4 c. milk
- 2 c. flour
- 1/2 tsp. baking soda
- 1/2 c. chopped nuts
Directions

1Preheat oven to 325°.

2Grease and flour 2 (7 1/2 x 3 1/2-inch) loaf pans.

3Set aside.

4In a large mixing bowl, cream margarine and sugar.

5Add eggs, milk and vanilla.

6Combine flour, baking powder, baking soda and salt.

7Stir into the creamed mixture. Fold in rhubarb and nuts.

8Spoon batter into prepared pans.

9Bake for 45 to 50 minutes.

10Wrap and serve the following day for the best flavor.
