Ingredients

  • 3/4 c. brown sugar
  • 3/4 c. white sugar
  • 2/3 c. canola oil
  • 2 egg whites, beaten
  • 1 c. buttermilk (using 1 c. skim milk, 1/2 c. vinegar)
  • 1 tsp. soda
  • 1/4 tsp. salt
  • 2 tsp. vanilla
  • 2 1/2 c. flour
  • 1 1/2 c. thinly sliced rhubarb
  • 1/2 c. chopped nuts

Directions

    Combine sugar, oil and egg whites.

    Add buttermilk and vanilla, mixing well.

    Sift flour, soda and salt; add to the above.

    Fold in rhubarb and nuts.

    Bake in 2 loaf pans that have been sprayed with Pam, lightly floured.

    Mix 1/4 cup brown sugar and 1 teaspoon cinnamon.

    Sprinkle over bread mixture.

    Bake at 350° for 45 minutes to 1 hour (until done).
