Ingredients
- 1 1/3 c. brown sugar
- 2/3 c. vegetable oil
- 1 beaten egg
- 1 tsp. vanilla
- 1 c. buttermilk or sour cream
- 2 1/2 c. flour
- 3/4 tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 1/2 to 2 c. finely diced rhubarb (1/4-inch cuts)
- 1/2 c. nuts, chopped
Directions

1Mix together sugar and oil.

2Blend in egg, vanilla and milk. In separate bowl, combine flour, salt, cinnamon and baking soda. Add to moist ingredients.

3Stir in rhubarb and nuts.

4Divide batter between 2 well-greased 8 x 4-inch loaf pans.

5Bake at 350° for about 45 minutes or until bread tests done with wooden pick. Turn out onto rack to cool.

6Yield: 2 loaves.
