Rhubarb Bread Pudding

- 10 1/2 oz (about 6 stalks) rhubarb, trimmed, cut into 3-inch lengths
- 1/2 cup packed brown sugar
- 10 slices white bread, crusts removed, buttered, each cut into 4 triangles
- 3 None large eggs
- 1/2 cup granulated sugar
- 1 cup milk
- 1 cup heavy cream
- 1 tsp vanilla extract
- None None Confectioners' sugar, to dust
Directions

1Place rhubarb in a small skillet with brown sugar and 2 tbsp water and cook on low heat for 3-5 mins, until just tender. Remove pan from heat.

2Preheat oven to 350°F. Grease a 6-cup ovenproof dish.

3Place bread in prepared dish, overlapping. Place rhubarb between each layer of bread. Whisk together eggs, granulated sugar, milk, cream and vanilla. Pour over bread and set aside to soak for 15 mins.

4Bake for 45 mins, until set and golden. Dust with confectioners' sugar to serve.
