  • 1 1/2 c. brown sugar
  • 1/2 c. shortening (combine part butter or margarine)
  • 1 egg
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 2 c. diced rhubarb (can get chopped frozen)

Directions

    Cream sugar and shortening; add egg and beat well.

    Mix flour, salt and soda together and add alternately to creamed mixture with milk.

    Stir in rhubarb.

    Pour into 9 x 13-inch greased and floured cake pan.
