- 3 Tbsp. butter (soft)
- 1 c. white sugar
- 1 egg
- 3 c. rhubarb, cut
- 1 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. nutmeg
Directions

1Cream butter and sugar. Cream in egg. Mix dry ingredients together and add to butter mixture. Add rhubarb and fold into the dough. Spread into an 8 or 9-inch square pan. Bake at 350° for 30 minutes. Serve with Cool Whip.
