  • 3 Tbsp. butter (soft)
  • 1 c. white sugar
  • 1 egg
  • 3 c. rhubarb, cut
  • 1 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. nutmeg

Directions

    Cream butter and sugar. Cream in egg. Mix dry ingredients together and add to butter mixture. Add rhubarb and fold into the dough. Spread into an 8 or 9-inch square pan. Bake at 350° for 30 minutes. Serve with Cool Whip.
