- 2 c. rhubarb, cut in 1/2-inch cubes
- 2 eggs
- 1 1/2 c. sugar (scant)
- 3 Tbsp. flour
Directions

1Pour boiling water over rhubarb and let stand 10 minutes; drain.

2Mix sugar and flour together.

3Add slightly beaten eggs. Stir in drained rhubarb.

4Pour in 9-inch unbaked crust.

5Bake 10 minutes at 425°; reduce heat to 350° and bake 30 to 40 minutes or until crust is done in bottom.

6When cold, top with whipped topping.
