Rhubarb Pie

  • 2 c. rhubarb
  • 1 1/2 c. sugar
  • 4 Tbsp. flour
  • 4 Tbsp. butter
  • 2 eggs, separated
  • unbaked pie crust

Directions

    Fill unbaked crust with rhubarb.

    Mix flour, sugar and butter. Add beaten egg yolks to mixture.

    Spread over rhubarb then bake at 350° until rhubarb is soft.

    Beat egg whites, add 4 tablespoons sugar; spread on top of pie.

    Put back in oven until brown.
