Rhubarb Pie

  • 3 c. fresh rhubarb, cut
  • 1 1/2 c. sugar
  • 3 Tbsp. flour
  • 1 egg, beaten
  • 2 Tbsp. milk
  • 1/2 tsp. red food coloring
  • 1 unbaked pie shell
  • 2 Tbsp. margarine

Directions

    Mix the sugar and flour together.

    Pour over rhubarb.

    Mix egg, milk and food coloring and add to rhubarb.

    Pour into unbaked pie shell.

    Dot with margarine.

    Add a top crust, cut slits on top crust and bake at 400° for 15 minutes.

    Reduce to 350° and bake 30 minutes more.
