  • 12 oz. frozen or fresh Rhubarb (thaw & drain if using frozen)
  • 1 1/4 c. sugar
  • 5 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. lemon juice
  • 2 Tbsp. Margarine
  • 2 pie shells

Directions

    Line 9-inch pie pan with 1 crust.

    Mix sugar, cornstarch, and salt.

    Stir into rhubarb.

    Pour into pie pan.

    Dot with butter and sprinkle lemon juice all over.

    Bake 40-50 minutes at 375.
