- 4 c. rhubarb
- 1 1/2 c. sugar
- 1/4 c. Minute tapioca
- 3 egg yolks, beaten
- 1 Tbsp. butter or margarine
- 1 baked pie shell
- 3 egg whites
- 6 Tbsp. sugar
- 2 Tbsp. lemon juice
Directions

1Combine rhubarb, 1 1/2 cups of sugar, tapioca, egg yolks and lemon juice in top of a double boiler.

2Cook until done.

3Stir in butter.

4Cool mixture, then pour into baked pie shell.
