Rhubarb Pudding

  • 4 c. fresh or frozen rhubarb
  • 1 c. water
  • 1/2 c. sugar
  • 1 (3 1/4 oz.) vanilla tapioca pudding
  • 1/2 c. sliced strawberries (optional)

Directions

    Cook rhubarb, water and sugar for 5 minutes or until tender. Add pudding mix and strawberries.

    Stir until mixture boils. Remove from heat and pour into serving dishes.

    Serve warm or cold.
