- 4 c. fresh or frozen rhubarb
- 1 c. water
- 1/2 c. sugar
- 1 (3 1/4 oz.) vanilla tapioca pudding
- 1/2 c. sliced strawberries (optional)
Directions

1Cook rhubarb, water and sugar for 5 minutes or until tender. Add pudding mix and strawberries.

2Stir until mixture boils. Remove from heat and pour into serving dishes.

3Serve warm or cold.
