Ingredients

  • rhubarb, cut enough in small pieces to fill 9 x 13-inch pan half full
  • 1 c. sugar
  • 1 1/2 c. miniature marshmallows
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1/2 tsp. nutmeg or cinnamon
  • 3/4 c. milk
  • 1 Tbsp. butter
  • 2 eggs
  • 1 1/2 tsp. vanilla

Directions

    Place cut rhubarb in 9 x 13-inch pan.

    Sprinkle with 1 cup sugar and marshmallows.

    Sift together flour, baking powder, salt, 1 cup sugar and nutmeg or cinnamon.

    Add remaining ingredients and beat 1 minute.

    Spread over rhubarb and bake at 350° for 45 minutes or until toothpick comes out clean.
