  • 3/4 c. milk
  • 1/2 tsp. salt
  • 1 c. rhubarb, cut in 3/4-inch lengths
  • 2 eggs
  • 3/4 c. flour
  • 1 c. brown sugar
  • 1/3 c. butter

    Heat 1/4 cup butter in a 1-quart dish in 425° oven until it bubbles.

    Meanwhile, beat eggs with milk, then gradually beat in flour and salt.

    Pour batter into bubbling butter.

    Drop rhubarb into center of batter.
