  • 1 c. uncooked rice
  • 1/2 c. sliced onion
  • 1 Tbsp. butter or margarine
  • 1 (2 1/2 oz.) can sliced mushrooms with liquid
  • 2 c. chicken broth (fat free)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Place rice in a baking dish.

    Saute onion in butter until soft.

    Add remaining ingredients.

    Bring to a boil.

    Pour over rice; stir.

    Cover with tight fitting lid or foil and bake at 375° for 25 to 30 minutes.
