- 1 c. uncooked rice
- 1/2 c. sliced onion
- 1 Tbsp. butter or margarine
- 1 (2 1/2 oz.) can sliced mushrooms with liquid
- 2 c. chicken broth (fat free)
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Place rice in a baking dish.

2Saute onion in butter until soft.

3Add remaining ingredients.

4Bring to a boil.

5Pour over rice; stir.

6Cover with tight fitting lid or foil and bake at 375° for 25 to 30 minutes.
