- 8 oz. long grain rice
- 2 tsp. blanched almonds, grated
- 1 (11 oz.) can mandarins, drained
- 1/2 tsp. saffron
- 1 tsp. finely chopped mandarin peel
- 3 c. chicken stock
- 1 bay leaf
- 3 Tbsp. butter
Directions

1Cover bottom of hot ovenproof pan with butter, swish to cover bottom.

2Mix rice with mandarin peel, put in pan and stir to coat rice with butter.

3Cook over low heat for 2 minutes, stir constantly.

4Pour chicken stock over rice, add saffron and bay leaf, salt and pepper to taste.

5Mix all ingredients.

6Place in 450° oven for 20 minutes.

7When rice is cooked, all liquid absorbed, remove bay leaf.

8Add almonds and mandarin segments. Serve warm.

9Serves 4 to 6.
