- 2 beef bouillon cubes
- 2 1/2 c. boiling water
- 2 Tbsp. margarine
- 1 c. raw rice (not instant)
- 1 c. celery, chopped
- 1/2 lb. fresh mushrooms, sliced or 1 small can
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. thyme
Directions

1About 1 hour before serving, start heating oven to 350°.

2In 1 1/2-quart casserole, dissolve bouillon cubes in boiling water, stirring while dissolving.

3In hot margarine in medium skillet (medium heat), saute rice for 5 minutes or until golden brown, stirring constantly.

4Add to broth in casserole.

5Add rice, onion, celery, mushrooms and seasonings.

6Bake, covered, stirring occasionally, for 40 minutes.

7Remove lid and cook 5 minutes longer.

8Serves 8 or more.
