- 1 (8 oz.) can pineapple slices
- 1/3 c. chopped green pepper
- 1/3 c. chopped sweet red pepper
- 1/4 c. butter or margarine
- 1 3/4 c. orange juice
- 2 c. instant rice (uncooked)
- dash of salt
- 1/8 tsp. curry powder
Directions

1Drain pineapple slices, reserving juice.

2Chop pineapple and set aside.

3Saute peppers and onion in 1 tablespoon melted butter, in a saucepan, until tender.

4Add orange juice and bring to a boil.

5Add rice, remaining 3 tablespoons butter, chopped pineapple, salt and curry powder.

6Remove from heat.

7Cover and let stand 10 minutes, stirring once.

8Garnish with red and green pepper strips.

9Makes 6 servings.
