- 2 c. uncooked rice
- 2 cloves garlic
- 1 onion
- 1 zucchini
- 1 small jar mushrooms
- 1 can either kidney beans or black beans
Directions

1Prepare rice as directed.

2Set aside.

3Chop garlic, onion and zucchini into small pieces.

4Fry garlic, onion and zucchini in hot oil for 2 to 3 minutes.

5Drain mushrooms and add to frypan.

6Drain and rinse beans and add to frypan.

7Mix cooked rice in with vegetables.

8Top with your favorite sauce (soy, sweet and sour) or cheese.
