Ingredients
- 1/4 c. butter or margarine
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 c. chopped celery
- 1/4 lb. mushrooms, chopped
- 2 chicken bouillon cubes
- 1 c. uncooked brown rice
- 1 tsp. ground marjoram
- 1 (17 oz.) can fruit cocktail or chopped peaches, drained
- 1/2 tsp. salt
- dash of pepper
- 2 c. water
Directions

1Heat oven to 350°.

2In medium saucepan, melt butter.

3Stir in onion, green pepper, celery and mushrooms; cover.

4Cook 5 minutes or until tender.

5Stir in water and chicken bouillon cubes; heat until boiling.

6Remove from heat; stir in rice, marjoram, salt and pepper.

7Pour into greased 2-quart casserole; cover.

8Bake 30 minutes or until rice is tender and liquid absorbed.

9Stir in fruit cocktail or peaches.

10Bake 15 minutes longer or until fruit is hot.

11Makes 8 servings.
