  • 1 c. uncooked rice
  • 1 (16 oz.) can Freestone sliced peaches
  • 1/3 c. brown sugar
  • 2 Tbsp. margarine
  • 1 tsp. lemon juice
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 c. whipped topping

Directions

    Cook rice as on package; drain peaches and reserve 1/2 cup of the liquid and 12 peach slices.

    Drain remaining peaches.

    Mix drained peaches, sugar, lemon juice, margarine and spices into hot cooked rice.

    Mix well; simmer for 5 minutes.

    Pour into buttered 1 1/2-quart casserole.

    Pour whipped topping over rice.

    Arrange peach slices on top and bake at 450° for 15 minutes.
