- 1 c. uncooked rice
- 1 (16 oz.) can Freestone sliced peaches
- 1/3 c. brown sugar
- 2 Tbsp. margarine
- 1 tsp. lemon juice
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 c. whipped topping
Directions

1Cook rice as on package; drain peaches and reserve 1/2 cup of the liquid and 12 peach slices.

2Drain remaining peaches.

3Mix drained peaches, sugar, lemon juice, margarine and spices into hot cooked rice.

4Mix well; simmer for 5 minutes.

5Pour into buttered 1 1/2-quart casserole.

6Pour whipped topping over rice.

7Arrange peach slices on top and bake at 450° for 15 minutes.
