- 5 c. cooked rice
- 1/2 small Mozzarella
- 6 eggs, separate yolks from whites
- 1 c. bread crumbs
- 1/4 tsp. pepper
- 1/2 c. grated Romano cheese
Directions

1Cook rice.

2Drain well at least 1 hour.

3Mix grated cheese, pepper and egg yolks with rice until sticky.

4Set aside.

5Cube Mozzarella.

6Make a rice patty, place Mozzarella cube in center and place another rice patty on top.

7Shape into a ball.

8Beat egg whites.
-
9Roll ball first in egg whites then in bread crumbs.

10Set balls for 2 hours.

11Fry in very hot oil.

12Drain and serve hot.
