Rice-Broccoli Crunch

Ingredients

  • 1/4 c. chopped onion
  • 3 Tbsp. butter or oleo
  • 1/2 c. milk
  • 1 c. water chestnuts, cut fine
  • 2 c. very dry cooked rice
  • 1/2 c. chopped celery
  • 1 c. cream of chicken soup (undiluted)
  • 1 pkg. frozen chopped broccoli
  • 1 (8 oz.) jar Cheez Whiz

Directions

    Saute onion and celery in butter.

    Add soup, milk, water chestnuts and 1/3 jar of Cheez Whiz; blend.

    Stir in thawed and drained broccoli and rice.

    Pour into lightly buttered 2-quart casserole dish.

    Bake at 350° for 30 to 40 minutes.

    Soften remaining Cheez Whiz by warming over double boiler.

    Spread over casserole.

    Bake 5 minutes longer.
