Ingredients

  • 6 servings
  • 1 1/3 cups rice World, Oriente Paella, or Paella rice
  • 1 7/8 cups frozen peas
  • olive oil to taste
  • 1 onion small
  • 2 teaspoons spice paella, or saffron
  • 2 tomatoes chopped
  • 1/4 red pepper
  • salt to taste
  • ground black pepper
  • 2 eggs
  • 4 tablespoons flour
  • margarine to taste
  • fresh parsley to taste

Directions

  1. 1
Boil the rice in salted water, when half cooked, add the peas.
  2. 2
When the rice is cooked, remove from heat, pass through a sieve, and wash with cold water to completely remove the gum from the rice.
  3. 3
In a frying pan, heat a little olive oil, add onion, pepper, and paella spice, and mix well. If you do not have the paella spice, use the saffron so the rice turns yellow.
  4. 4
Add the tomatoes, and let brown. If the mixture is too dry, add 1 tablespoon of water at a time, until the sauce is moist enough.
  5. 5
In a bowl, mix the rice and the sauce.
  6. 6
Add the eggs, one by one.
  7. 7
    Add the flour.
  8. 8
Then shape small balls, and fry in a non-sticking frying pan with a little margarine. When browned on one side, turn over very carefully to brown the other side.
  9. 9
Remove from pan, garnish with fresh parsley.
  10. 10
Serve with a yogurt sauce and a small salad.
