- 2 c. sliced onions (yes!)
- 1 red or green pepper, diced
- 1/4 c. stock or water
- 1 Tbsp. butter
- 1 c. sliced mushrooms
- 1 clove garlic, minced
- 1 c. cottage cheese
- 1 egg
- 1/3+ c. Parmesan cheese
- 1/3 c. minced dill or 2 Tbsp. dried
- 1/3 c. minced parsley
- 1/3 c. bread crumbs
- 1 Tbsp. Parmesan cheese
- 1 Tbsp. butter, melted
Directions

1Mix bread crumbs, 1 tablespoon Parmesan cheese and 1 tablespoon butter.

2Combine onions, peppers, stock and 1 tablespoon butter in pan.

3Cover and cook over medium heat until limp.

4Add mushrooms and garlic; cook, uncovered, until all the liquid has evaporated.
