  • 3 c. cooked rice
  • 2 c. sliced onions (yes!)
  • 1 red or green pepper, diced
  • 1/4 c. stock or water
  • 1 Tbsp. butter
  • 1 c. sliced mushrooms
  • 1 clove garlic, minced
  • 1 c. cottage cheese
  • 1 egg
  • 1/3+ c. Parmesan cheese
  • 1/3 c. minced dill or 2 Tbsp. dried
  • 1/3 c. minced parsley
  • 1/3 c. bread crumbs
  • 1 Tbsp. Parmesan cheese
  • 1 Tbsp. butter, melted

Directions

    Mix bread crumbs, 1 tablespoon Parmesan cheese and 1 tablespoon butter.

    Combine onions, peppers, stock and 1 tablespoon butter in pan.

    Cover and cook over medium heat until limp.

    Add mushrooms and garlic; cook, uncovered, until all the liquid has evaporated.
