  • 3 medium onions
  • 2 cloves garlic
  • 2 c. rice
  • 3 c. chicken stock or broth
  • 2 (10 oz.) pkg. spinach
  • 1/2 c. Parmesan cheese

Directions

    Saute onions and garlic in 1/4 cup oil.

    Add rice and brown lightly.

    Add chicken stock or broth and thawed spinach; stir well.

    Add cheese.

    Place in casserole and bake at 350° for approximately 25 minutes until rice is tender.

    Add salt and pepper to taste.
