- 3 medium onions
- 2 cloves garlic
- 2 c. rice
- 3 c. chicken stock or broth
- 2 (10 oz.) pkg. spinach
- 1/2 c. Parmesan cheese
Directions

1Saute onions and garlic in 1/4 cup oil.

2Add rice and brown lightly.

3Add chicken stock or broth and thawed spinach; stir well.

4Add cheese.

5Place in casserole and bake at 350° for approximately 25 minutes until rice is tender.

6Add salt and pepper to taste.
