Opal'S Cornmeal Dumplings

- 1 c. water
- 1/2 c. yellow cornmeal
- 1/2 tsp. salt
- 1 egg, beaten
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- dash of pepper (optional)
- 7 oz. can whole kernel corn, drained
Directions

1In saucepan, combine water, cornmeal and salt; bring to boil. Cook and stir until thickened.

2Remove from heat.

3Stir a moderate amount of the hot mixture into 1 beaten egg.

4Return to hot mixture.

5Stir together the flour, baking powder and pepper.

6Add to the cornmeal mixture; beat well.

7Stir in the corn.

8Drop batter by rounded tablespoons into boiling stew mixture.

9Cover; simmer until dumplings are done, 10 to 12 minutes.
