Opal'S Cornmeal Dumplings

  • 1 c. water
  • 1/2 c. yellow cornmeal
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1/2 c. all-purpose flour
  • 1 tsp. baking powder
  • dash of pepper (optional)
  • 7 oz. can whole kernel corn, drained

Directions

    In saucepan, combine water, cornmeal and salt; bring to boil. Cook and stir until thickened.

    Remove from heat.

    Stir a moderate amount of the hot mixture into 1 beaten egg.

    Return to hot mixture.

    Stir together the flour, baking powder and pepper.

    Add to the cornmeal mixture; beat well.

    Stir in the corn.

    Drop batter by rounded tablespoons into boiling stew mixture.

    Cover; simmer until dumplings are done, 10 to 12 minutes.
