- 1 c. chicken broth
- 2 Tbsp. butter
- 1 small onion, chopped
- 1/2 c. uncooked rice
- 1/4 c. dry white wine
- 1/4 tsp. salt
- pinch of pepper
- pinch of saffron threads
- 1/4 c. grated Parmesan cheese
- 1 large egg
- 1 1/2 oz. Mozzarella cheese, cut into 1/2-inch cubes
- vegetable oil
- 1/2 c. fine dry unseasoned bread crumbs
Directions

1Heat broth in small saucepan over medium heat, to simmering. Keep hot over low heat.

2Heat butter in heavy 1 1/2-quart saucepan over medium heat.

3When foam subsides, add onion.

4Saute until onion is soft.

5Stir in rice, cook and stir 2 minutes.

6Stir half the broth, the wine, salt and pepper into rice; reduce heat to medium-low.

7Cook uncovered, stirring frequently, until liquid is absorbed, 5 to 8 minutes.
