Ingredients

  • 3/4 stick margarine
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1/2 c. celery, diced
  • 1 c. rice
  • 1/4 tsp. salt
  • 2 cans beef consomme
  • pepper to taste
  • 1 (4 oz.) can mushrooms
  • 1 tsp. parsley
  • 1 can water chestnuts, sliced

Directions

    Melt the margarine in a saucepan over low heat.

    Add the green pepper, onion and celery and cook for 10 minutes.

    Add remaining ingredients except water chestnuts.

    Drain water chestnuts.

    Stir into rice mixture and place in a casserole dish.

    Bake at 350° for 1 hour.

    Makes 6 servings.
