  • 1 Tbsp. oil
  • 1 medium onion, chopped
  • 1 small green pepper, cut into strips
  • 1 clove garlic, minced
  • 2 cans Cajun style stewed tomatoes
  • 1 (10 oz.) pkg. frozen cut okra
  • 1/2 lb. pork, cut into thin strips or canned tuna or any meat desired, cooked
  • 2 c. cooked rice

    Heat oil in skillet.

    Add onion, green pepper and garlic; cook until tender-crisp.

    Add tomatoes, okra and cooked meat.

    Bring to a boil.

    Stir in rice.
