- 3 c. hot, cooked long grain rice
- 2 large eggs
- 3/4 c. grated Parmesan cheese
- 2 c. shredded skim milk Mozzarella cheese
- 1 c. Ricotta cheese
- 1 lb. lean ground beef
- 1/4 c. chopped parsley
- 1 (15 1/2 oz.) jar spaghetti sauce
- 1 Tbsp. oregano, crushed
Directions

1In a large bowl, combine rice, 1 egg and 1/2 cup Parmesan cheese.

2In another bowl, combine 1 egg, Mozzarella, Ricotta, 1/3 Parmesan and parsley.

3In a large skillet, brown beef, stirring to break into bits.

4Add sauce and oregano.

5Heat.

6Evenly spread hot rice mixture into an 11 1/2 x 7 1/2 x 2 1/2-inch baking dish.

7Top with half the cheese mixture and meat mixture.

8Repeat layers. Sprinkle with remaining Parmesan cheese.

9Bake at 375° for 20 minutes or until hot.
