- 3 Tbsp. margarine (I use light margarine)
- 1 small finely chopped onion
- 2 3/4 c. chicken broth (use 3 bouillon cubes)
- 1 c. Uncle Ben's rice
- Parmesan cheese (to sprinkle on top)
Directions

1Melt margarine and saute onion in a large skillet.

2Add 1/2 cup chicken broth to the skillet.

3Add the 1 cup rice.

4Stir the rice mixture and when it thickens, add a little more broth. Continue slowly adding broth until it is all used up.

5Sprinkle with Parmesan cheese, if desired.
