Rice Milanese

  • 3 Tbsp. margarine (I use light margarine)
  • 1 small finely chopped onion
  • 2 3/4 c. chicken broth (use 3 bouillon cubes)
  • 1 c. Uncle Ben's rice
  • Parmesan cheese (to sprinkle on top)

Directions

    Melt margarine and saute onion in a large skillet.

    Add 1/2 cup chicken broth to the skillet.
  3. 3
    Add the 1 cup rice.
  4. 4
    Stir the rice mixture and when it thickens, add a little more broth. Continue slowly adding broth until it is all used up.

    Sprinkle with Parmesan cheese, if desired.
