Rice Mushroom Bake

- 3 c. sliced mushrooms
- 1/2 c. chopped onion
- 2 Tbsp. butter or margarine
- 2 eggs
- 6 oz. cream cheese
- 1 (13 oz.) can evaporated milk
- 3 c. cooked rice
- 1 tsp. parsley
- 1 tsp. salt
Directions

1Saute mushrooms and onion in butter until tender.

2In a bowl beat eggs and cream cheese until smooth, then stir in milk.

3In a baking pan, combine mixtures and the rice.

4Bake, uncovered, in a 350° oven for 45 minutes.

5Let stand 10 minutes and then serve.
