- 1 (13 3/4 oz.) can chicken broth
- 1/4 c. water
- 1 c. uncooked long grain rice
- 1 tsp. salt
- 10 oz. frozen chopped spinach
- 2 tsp. dill weed
- 1/4 c. Parmesan cheese, grated
Directions

1In large saucepan, bring broth and water to boil.

2Add rice and salt; when boiling reduce to low.

3Cover and cook 10 minutes; add spinach and dill pushing spinach down into rice.

4Cover and cook 10 to 15 minutes longer until rice is tender and water absorbed.

5Remove from heat and let stand 3 to 5 minutes.

6Before serving, stir spinach and cheese into rice.

7Makes about 4 1/2 cups.

8Good as a starch and vegetable.
