Rice Peruvian-Style

Ingredients

  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 c. water
  • 2 c. white rice, washed thoroughly
  • 5 green onions, cut very thin
  • 8 pieces bacon, fried crisp and cut into fine pieces with scissors
  • 3 eggs, scrambled dry and cut into small squares
  • soy sauce

Directions

    In deep pot, saute garlic in oil and salt.

    Add water and bring to a boil.
  3. 3
    Add rice and return to a boil.
  4. 4
    Reduce to a simmer, cover and cook 20 minutes or until rice is cooked.

    Mix in onions, bacon and eggs.

    Add a little soy sauce, mix well and serve.
