Rice Pie

Ingredients
- 2 cans chicken broth
- 2 c. rice (uncooked)
- 1 medium onion, chopped
- 2 Tbsp. oil (olive)
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. nutmeg
- 1 box pie crust
- salt and pepper to taste
Directions

1Prepare pie crust, adding the nutmeg to the dry ingredients. Cook the rice in broth until liquid is absorbed.

2Saute onion to translucent (in olive oil).

3Mix rice, onion (scrape oil out of pan with rubber spatula) and cheese until well blended.

4Add your salt and pepper.

5Mix a little more and place mixture in bottom pie shell.

6Cover with other half of shell and bake 1 hour at 350°. Crust will be golden brown.

7This can be served warm or cold.
