- 1 c. long grain rice
- 1 small onion, finely chopped
- 1/2 c. pine nuts or blanched almonds
- 1 Tbsp. butter
- 2 Tbsp. olive oil
- 2 1/2 c. chicken stock
- 1/4 tsp. salt (may be omitted)
- 2 Tbsp. minced parsley
Directions

1In medium skillet, lightly brown rice, onion and nuts in butter and oil over moderate heat.

2Stir often to ensure an even color.

3Add stock and salt.

4Cook, covered, over low heat for about 20 minutes, until rice has absorbed liquid.

5Toss with minced parsley.
