Steak Salad

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • 4 (3.5 oz) minute steaks
  • 1 (13.5 oz) can red kidney beans, drained, rinsed
  • 1 (13.5 oz) can sweet corn, drained, rinsed
  • 1 None red bell pepper, deseeded, chopped
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 cup fresh cilantro leaves
  • None None tortillas, to serve

Directions

    Combine 1 tbsp oil, 1 tbsp lime juice and garlic. Rub over steaks. Set aside to marinate.

    Meanwhile, combine beans, corn, pepper, radish and cilantro. Combine remaining oil and juice and toss with salad mixture. Season to taste. Set aside.

    Heat a grill pan over high heat. Sear steaks for 1 min per side. Season to taste. Let rest for 2 mins then slice and arrange over salad. Serve with tortillas.
