- 1 large onion
- 1 tsp. chopped parsley
- 1/4 c. butter or margarine
- 2 c. Minute rice
- 2 c. beef bouillon or 2 beef bouillon cubes in water and 1/2 tsp. salt
- 1/3 c. seedless raisins
- 3/4 c. sliced, toasted almonds
Directions

1Saute onion in butter in skillet until tender, but not brown, about 5 minutes.

2Add rice and saute for 3 to 5 minutes.

3Add bouillon, salt and raisins.

4Bring to a boil and remove from heat. Let stand for 5 minutes.

5Stir in almonds and parsley.

6Fluff with a fork.

7Serves four.
