  • 1 stick margarine or butter
  • 1 handful fine egg noodles, crushed in hand
  • 1 c. regular rice (not instant)
  • 1 can Campbell's beef consomme (add water to = 2 c.)
  • 1 medium onion, diced
  • 1 medium green pepper, diced
  • small jar chopped pimento

Directions

    Melt margarine; add crushed egg noodles and brown lightly. Add two cups mixture of beef consomme and water and bring to a boil.

    Add rice; cover and simmer about 10 minutes.

    Add the chopped vegetables and pimento; cover and simmer another 15 to 20 minutes.

    Stir occasionally to prevent sticking.
