- 1 clove garlic, chopped
- 1/4 c. chopped onion
- 1/4 c. chopped bell pepper
- 1/4 c. chopped celery
- 2 Tbsp. oleo
- 1 1/2 c. rice
- 3 bouillon cubes
- 3 c. water
- 1 small can mushrooms (optional)
Directions

1Saute garlic, onion, bell pepper and celery in oleo.

2Add rice.

3Over low heat, lightly brown the rice.

4As rice is browning, dissolve bouillon cubes in 1 cup hot water.

5After rice is lightly browned, add bouillon mixture, then add remaining 2 cups water.

6After water is mostly cooked off, add mushrooms. Allow rice to finish cooking and season to taste.
