Ingredients
- 2 Tbsp. chicken fat, butter or shortening
- 1 onion, grated
- 2 cloves garlic, ground
- 1 bay leaf
- 1 c. raw rice
- 1 tsp. salt
- 1 (1-inch) slice bell pepper
- 1 1/2 c. hot chicken broth or consomme
- 1 1/2 c. hot water
Directions

1Melt fat in heavy saucepan.

2Add onion, garlic and bay leaf. Cook gently 5 minutes or until lightly browned.

3Add rice and salt. Stir.

4Add other ingredients.

5Stir and bring to a boil; taste and season.

6Cover and simmer for 5 minutes.

7Place in 375° preheated oven.

8Bake, uncovered, for 30 minutes.

9When cooking, remove bay leaf and bell pepper.

10Serves 6.
