  • 1/2 lb. mushrooms, diced
  • 1 Tbsp. fresh chopped parsley
  • 1 small onion, diced
  • 1 lb. long grain rice (half cooked)
  • 6 Tbsp. oil
  • 1 1/2 pt. chicken broth
  • salt and pepper
  • 1 bay leaf
  • turmeric according to taste
  • cayenne according to taste
  • curry according to taste

Directions

    Saute mushrooms, parsley, onion, and cooked rice in oil.

    Put into a 3-pint casserole dish with broth and seasonings and cover. Bake at 350° (gas 4) for 45 minutes or until the rice is tender and liquid is absorbed.
