- 1/2 lb. mushrooms, diced
- 1 Tbsp. fresh chopped parsley
- 1 small onion, diced
- 1 lb. long grain rice (half cooked)
- 6 Tbsp. oil
- 1 1/2 pt. chicken broth
- salt and pepper
- 1 bay leaf
- turmeric according to taste
- cayenne according to taste
- curry according to taste
Directions

1Saute mushrooms, parsley, onion, and cooked rice in oil.

2Put into a 3-pint casserole dish with broth and seasonings and cover. Bake at 350° (gas 4) for 45 minutes or until the rice is tender and liquid is absorbed.

3Serves 4 to 6.
