Rice Pilaf With Bacon

  • 1 1/2 cups long grain white rice
  • 1 cup shallots chopped
  • 3/4 cup poblano pepper chopped
  • 1/2 cup celery chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon sage leaves fresh, chopped
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 3 slices bacon cooked and crumbled

Directions

    Saute the shallots, pepper, celery, mushrooms and garlic in olive oil. Cook until tender.

    Add sage leaves.

    Add chicken broth and pepper; bring to a boil.

    Stir in rice and simmer, stirring occasionally until rice is cooked-about 25 minutes.
