Rice Pilaf With Bacon

- 1 1/2 cups long grain white rice
- 1 cup shallots chopped
- 3/4 cup poblano pepper chopped
- 1/2 cup celery chopped
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon sage leaves fresh, chopped
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 3 slices bacon cooked and crumbled
Directions

1Saute the shallots, pepper, celery, mushrooms and garlic in olive oil. Cook until tender.

2Add sage leaves.

3Add chicken broth and pepper; bring to a boil.

4Stir in rice and simmer, stirring occasionally until rice is cooked-about 25 minutes.

5Stir in bacon just before serving.
