  • 3 c. nonfat milk
  • 1/3 c. short grain rice (such as pearl)
  • 1/4 c. sugar
  • 1/2 tsp. vanilla
  • 1/4 tsp. ground nutmeg

Directions

    In a 9-inch square baking dish or a shallow 2 or 3-quart casserole dish, combine milk, rice, sugar, vanilla and nutmeg. Cover and bake in a 300° oven until thick and light golden in color (about 3 hours), or bake pudding, uncovered, and an amber, caramel flavored skin will form on top.
