  • 1 c. uncooked rice
  • 1 qt. milk
  • 8 Tbsp. butter
  • 3/4 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. raisins
  • 5 eggs, beaten
  • 1 tsp. grated lemon rind
  • 1 tsp. cinnamon

    Combine rice and milk.

    Bring to a boil.

    Cover and cook over low heat until rice is tender.

    Add butter, sugar, vanilla, lemon rind, raisins and eggs.

    Pour into a buttered 2-quart casserole dish.

    Sprinkle with cinnamon and bake at 350° for about 25 minutes.
