- 1 c. uncooked rice
- 1 qt. milk
- 8 Tbsp. butter
- 3/4 c. sugar
- 1 tsp. vanilla
- 1/2 c. raisins
- 5 eggs, beaten
- 1 tsp. grated lemon rind
- 1 tsp. cinnamon
Directions

1Combine rice and milk.

2Bring to a boil.

3Cover and cook over low heat until rice is tender.

4Add butter, sugar, vanilla, lemon rind, raisins and eggs.

5Pour into a buttered 2-quart casserole dish.

6Sprinkle with cinnamon and bake at 350° for about 25 minutes.
