- 1 1/2 c. rice, cooked in 2 1/2 c. water
- 3 egg yolks, beaten (reserve egg whites)
- 1 c. sugar
- 4 drops lemon extract
- 1/2 stick butter
Directions

1Combine egg yolks, sugar, cooked rice and lemon extract; mix well.

2Cook over low heat.

3Stir constantly until thickened.

4Add butter after removing from heat.

5Place in baking dish.

6Beat egg whites until foamy; spread on pudding.

7Broil for about 1 minute or until top is brown.
