- 2 eggs or 4 egg yolks
- 1/2 c. sugar
- 1/2 c. raisins
- 2 c. milk
- 1/2 tsp. vanilla
- 1/4 tsp. salt
- 2 c. hot cooked rice
- ground nutmeg
Directions

1Heat oven to 325°.

2Beat eggs in ungreased 1 1/2-quart casserole.

3Stir in sugar, raisins, milk, vanilla, salt and hot rice.

4Sprinkle with nutmeg.

5Bake uncovered 50 to 60 minutes, stirring occasionally, until knife inserted halfway between center and edge comes out clean.

6Serve warm or cold and, if desired, with cream.

7Refrigerate any remaining pudding.
