Rice Pudding

  • 1 c. rice
  • 6 c. water
  • 1/2 tsp. salt
  • 1 qt. milk
  • 1 Tbsp. cornstarch
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 5 egg yolks
  • 5 egg whites
  • 3 Tbsp. sugar

Directions

    Boil rice in water and salt for 15 minutes with cold water. Add milk and boil 5 minutes more.

    Blend cornstarch, 3/4 cup sugar and salt.

    Beat egg yolks and add to sugar mixture.

    Spoon some rice slowly into egg yolk mixture and then slowly add all the rice, mixing well, and let it come to a boil.

    Remove from heat and add vanilla.

    Pour into a large bowl.

    Beat egg whites and 3 tablespoons sugar.

    Spread on rice and brown in oven at 375°.
